Strawberry Almond Spinach Salad
If you haven’t already heard, I’ve got some delicious tasting spinach salad recipes that use poppy seed salad dressing. Today I want to share with you my Strawberry Almond Spinach Salad because, hello, strawberries! I love strawberries, in fact, I have made myself a little strawberry patch in my garden that I cannot wait to raid on the regular when they start fruiting. Strawberry smoothies, strawberry cheesecake, strawberry strawberries… there is really an endless amount of ways to apply strawberries into your diet.
I laugh because Gregory doesn’t like to eat the strawberry just as it is, but will eat it when I cut it up and add it to a salad or other dish. Silly little guy. I guess he had tried a sour strawberry one time and hasn’t forgotten. Since watching him eat these salads I’ve concluded that mixing foods he would normally not eat alone into a dish with a yummy sauce is the way to cook in our house. Hiding food in other food, it’s like I should write a book… like I’m the first parent ever… like no one has ever had a pet to give medication to. Yeah, yeah, as it turns out, after Pregnancy Brain you get something called Mommy Brain. Who knew simple and useful things you used to know take a ridiculous amount of time before you can adapt them to your new life as a parent.
Anyways, I remember the first time I had this salad. I had seconds, and perhaps thirds if I recall correctly. I was at my Aunti’s house on SSI and I wasn’t a usual fan of the spinach. So I guess I, myself, am proof that when you mix foods together that normally your kids won’t like alone, they’ll try and perhaps love the new food dish. Strawberry Almond Spinach Salad Recipe
Poppy Seed Salad Dressing
- Wash your spinach and strawberries. Slice your fruit and mix together with spinach in a bowl.
- Add your almond slivers and feta cheese. Mix salad to ensure it’s well blended.
- Add Salad dressing and serve to eat.
