Grilled Cheese Sandwiches
I’m a big fan of a good grilled cheese sandwich. Whenever I think of one I am immediately brought back to my childhood where my mom made cheesey kraft grilled cheese with tomato soup… If I was lucky it’s be tomato with rice soup. Mmmmm. Gregory, my toddler, isn’t a fan of tomatoes. We grew tomatoes this year in hopes to get him interested in them more via seeing them grow, but he doesn’t like the taste.
This has left me with a problem. How do I make Grilled cheese without tomato soup? I need to make it look delicious and edible enough that a toddler will be intrigued. I experimented one day with what I had in the fridge and created a new grilled cheese that doesn’t require soup. It’s an apple and pepper grilled cheese. I mean, you can have soup too, but I get full off of this that I don’t need a side dish.
Apples and Cheese
I never really understood the novelty of good wine, cheese and grapes until I was pregnant and my Aunt gave us some delicious local farm cheese and grapes from the Okanagon. I didn’t have the wine, but I was hooked on the combination of a good cheese and fruit. Never before had I considered them good together…and considering I had severe morning sickness, finding a food I enjoyed AND could keep down was a winner.
I’m not an expert at finding the perfect combination of flavours. In fact, I’m a person who grabs what I have in the fridge, throw it all together and hope it tastes good. 9 times out of 10 I impress myself beyond belief. I am beginning to think there isn’t much to this whole cooking in the kitchen as a mom thing. While I don’t think you need to use any fancy cheeses, I happened to have Swiss cheese and recommend you splurge on something other than block cheese. Choose your favourite, hope for the best, surprise yourself, indulge in the glorious combination of apples and cheese.
Apple and Pepper Grilled Cheese Sandwich
You can make this sandwich without bell peppers, I threw it in on a whim for some extra colour in the photos… it turned out to be so friggin delicious that I was once again so proud of my cooking skillz. #LevelUp
I recommend finding the best blend of cheese and apple you enjoy before exploring the world of peppers if you don’t try it out with Swiss first. I can’t vouch for any other concoctions and am unsure if you’ll get a unsavoury flavour. If, however, you are adventurous and try out a different recipe combination than I give you here and it turns out delicious, let me know your recipe! Orange Bell Pepper
- Slice apple and bell pepper thinly
- Spread butter on your bread for cooking, and inside if you wish
- Place apples, peppers and cheese slice(s) on your bread
- Squirt honey mustard on sandwich
- Cook sandwich
- Eat Sandwich
- Repeat steps 1-6 with left over ingredients
- Bask in your glorious food-baby-belly
Now, as I said, I am not one to go from a recipe. I wrote this down simply so I know the basic version of one delicious sandwich I can make many delicious variations from. Maybe I want to try cucumber instead of pepper, maybe I want ranch sauce instead of mustard… the options are endless. Think outside the box and create your own masterpiece.
I enjoy putting two slices of cheese on my grilled cheese sandwich. Not only because it’s delicious, but it helps keep all the ingredients inside stay inside while cooking and eating. All that cheesey gooey goodness has two purposes, I like it when my food helps me out.
